Fiala Brothers Brewhouse is Uptown Normal’s Premier Brewpub for Locally Brewed Craft Beer and Delicious Grilled Cheese Sandwiches.
About Fiala Brothers Brewery & Beer Hall:
Fiala Brothers Brewery & Beer Hall was founded by two brothers, Steve and Ryan Fiala, after Steve started brewing beer as a hobby in 2010. After several years, they decided to turn their passion into a business and began looking for the perfect location in Bloomington-Normal and Champaign-Urbana. They eventually found a building in Uptown Normal that was originally a locksmith shop, but decided to tear it down and build a new structure to create the first Brewery & Beer Hall in the area with a rooftop bar.
The concept of their Beer Hall originates in Germany where strangers are encouraged to become friends by sharing a long wooden table. While the pandemic made packing unrelated people into a confined space challenging, Fiala Brothers still incorporated the Beer Hall ethos into their design, including a signature Beer Hall table near the entry. To complement their beers, they developed a focused menu of sandwiches and sides that features locally or regionally sourced ingredients, with a core of gourmet grilled cheese that was discovered through a friend.
Fiala Brothers features a variety of beers, including their signature Farmhouse Ale, and tries to showcase other local and regional breweries on their 24 taps. They also offer a selection of whiskeys for bourbon enthusiasts. The project design was complex and faced delays due to material shortages, but the brothers persevered and finally opened their doors. They hope their brewery will be a special place where people can come together for years to come.
